Only 10 Ingredients
The Chicken Dinner I wont't stop making!" Let's face it, time to get back in the kitchen, even for just a bit. But, have no fear my friends, bc this is the easiest one yet with only 10 easy to find ingredients and let me tell you a secret trick that will seriously make your entire day!
Serves - 4
2.5 pounds chicken legs and or drum sticks
1/4 cup miso paste
2 tablespoons sesame oil
1/4 cup reduced sodium soy sauce or coconut aminos
1 tablespoon honey
10 garlic cloves, peeled
1/2 teaspoon ground ginger
1 teaspoon all purpose Goya adobo seasoning
1 lb. broccoli cut into chunks
1 large squash cut into chunks
1.) Preheat oven to 375 degrees and in a small bowl whisk soy sauce, miso, honey, ginger and grate or chop 3 cloves of the garlic into a marinade.
2.) Pat dry the chicken and marinate the chicken for 1 hour or up to overnight.
3.) Spread the chicken into center of pan and fan veggies (with remaining garlic) over the outside and even layer. Do not overlap or they won't crisp up right.
4.) Drizzle sesame oil over everything.
5.) Bake for 75 minutes and feel free to add some chopped scallions on top before serving.
