"It's all about the sides!" Even though we are still a few months away from Thanksgiving, side dish nibbles are just as crucial for any Summer BBQ or shindig. Here we have (3) easy peasy nibbles that are my goto's when I'm hosting and need simple and delicious ASAP!
Side #1
Avocado-Pesto Zoodles
Ingredients
3 medium zucchini spiralized
1 avocados, ripe
1/2 cup pistachios
2 clove garlic
1 cup fresh basil
1 Tbsp lemon juice
1/3 cup Tbsp olive oil
salt & pepper
water as needed to loosen
*optional toss in tomatoes & chopped scallions
Directions
Add all ingredients except avocado and zucchini to processor and blend until smooth. Add in avocado and blend again. Adjust seasoning and pour pesto over zucchini. Mix until smooth and add in tomatoes and chives if you choose.

Honey Mustard Cauliflower Steaks
Ingredients
1 head cauliflower sliced into flat steaks
1/4 cup Dijon or Stone Ground Mustard
2 tablespoons honey
Directions
Preheat oven to 425 degrees. Whisk mustard and honey together. Spray a large pan and cauliflower with cooking spray and brush on mixture. Roast for 30-40 minutes until golden and serve. Sprinkle with salt and pepper if desire.
Side #3 Cabbage Slaw
Ingredients
8 ounce bag coleslaw mix OR chopped cabbage of your own
1/3 cup light or olive oil based mayo
1 tablespoon apple cider vinegar
Directions
Whisk together mayo, vinegar salt and pepper. Combine with slaw until evenly coated. Store in air tight container and season with more salt and pepper as needed
