Hi there! I’m Nicole, but feel free to call me Nic or Nicky. WELCOME to my world of Food, Recipes, Tips, & Entertaining Ideas. In a nutshell, my passion for food has led me on many long journeys. Through the years I have explored many ideas such as becoming a nutritionist, opening a cafe, and even teaching private lessons to groups. While these endeavors are not off the table, my main focus at this time is being a wife to my husband Eric and a full-time mom to my 6 year old Ella and 3 year old Noah.
Being a foodie is a way of life. Food is ALWAYS present in our daily life from simple snacks to celebrations; we even plan our family trips around our meals! I assure you, appreciating food does not mean “overeating.” Learning to indulge on portioned “flavor bursts” ensures everything you eat is worth your while! A surefire strategy is incorporating minimal ingredients and cooking with your heart. One of my favorite vacations was a trip we took to Italy. It was on the island of Capri (my favorite place on earth!) that I learned the importance of moderate cooking. The local food is made with fresh ingredients, and with just a few simple combinations you can create a delectable masterpiece. Granted, it didn’t hurt to eat dinner with lush, gorgeous lemon trees as a backdrop on a dreamy island. However, I have learned to cultivate that culinary experience in my own kitchen and want to help you do the same! I am excited to share a firsthand perspective of my pallet with simple, healthful, cozy cooking for your family & friends. I recognize that it is often the “every day dishes” that are overlooked the most, and I would love to help you make each one unforgettable.
Cook with me and enjoy each nibble!
About Me
I am New Yorker (in the burbs) and other than cooking, I enjoy tennis, movies, a good book, my work-out classes, top 10 music, VACATION, roller coasters, sushi, sake, eggplant parm and peanut butter on ANYTHING (especially chocolate!), shopping, The NY POST, my morning cup of hot coffee and my afternoon tall iced coffee (summer only). I also live for tournament Boggle games with my mom, a nice flat pillow, my small herb garden & the gratifying feeling of using those herbs in my cooking! My friends and family mean the world to me! Oh, and my daughter and I are obsessed with the Food Network. Ina is our idol!
This blog has fulfilled a need in me that is just what I have been searching for. There is nothing that makes me happier than “talking food,” so let the fun begin and Happy Cooking!!
xoxo
Nic
