Banana Chocolate Chip Pancakes!” Even typing the words make me drool. As a huge “pancake breakfast” house, this is a dish that is requested more than frequently….in fact I’d say at least twice a week. In the past, I used to reserve the dish for the weekend, but now, I more or less have the recipe memorized and can probably make it almost as fast as pouring a bowl of cereal. To make life easier for you, I jotted down a bunch of options that will still nail down the authenticity of this easy peasy pancake meal. Basically, just make sure you use some good flour, ripe bananas, a handful of chocolate chips & un-sweetnened apple sauce. Finish them off with a drizzle of maple syrup and that takes care of that!
* 2 cup white whole wheat flour or all purpose flour or all purpose flour
* 2 ripe bananas
* ¼ cup chocolate chips
* 1 teaspoon vanilla
* 1 teaspoon baking powder
* 1/4 teaspoon salt
* 1 cup organic milk or low-fat milk + more if needed
* 1/2 cup unsweetened apple sauce
* 2 large eggs beaten
* warm maple syrup for topping
* 2 tablespoon light butter
1.) Using a potato masher or fork, mash bananas in a small bowl.
2.) Add eggs, milk, apple sauce & vanilla to the bowl and whisk.
3.) In a large mixing bowl combine flour, salt, baking powder and chocolate chips.
4.) Add to dry mixture and stir until it turns into a batter. (Add more water or milk in necessary)
5.) Heat pan and add butter to a griddle pan.
6.) Gently pour the pancake batter onto the pan into circles. Wait for each to bubble and flip.
7.)Drizzle with warm syrup and garnish with extra banana slice and couple chocolate chips on top.
