“I have to tell you that nobody loves a satisfying sandwich straight from the grill more than me.  Stack some cool crisp veggies on top of a nice protein and that’s my choice of dinner…done!  However, when we want to keep it light, sometimes those mediocre grilled chicken sandwiches and frozen veggies burgers just don’t do the trick.  The chicken can be a bit bland and the veggie ones are often masked by some type of bready filling that just makes my mind wonder a little too much.  That being said, I thought it was time to create my own “burger” that satisfied that BBQ desire without all of that fat and calories that could unfortunately come along with it.   People, please say hello to my Garden Chicken Burger Combo.  It’s simply ground chicken with some sauteed veggies mixed in and a little surprise of sweetness to give it an added kick.  No carby fillers here; just fresh ingredients that have no guilt attached whatsoever.  In fact, I actually doubled the portion of ingredients because one round of these babies just won’t be enough.  Patty them up and freeze half of the uncooked burgers for next week’s dinner, you’ll be thrilled you did!”  

Serves 8

Ingredients

  • 2 lbs. ground chicken meat (all white meat will work)
  • 1 bell pepper diced
  • 1 zucchini diced
  • 2 stalks celery diced
  • 1/2 apple cored, peeled, seeded & diced (my secret ingredient!)
  • 1/4 red onion peeled & diced
  • 5 baby Portabella mushrooms cleaned and chopped
  • 2 tablespoon olive oil
  • 1 tablespoon tomato paste
  • 2 garlic cloves minced
  • 2 teaspoon ground coriander
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • Ground pepper to taste
  • 1 avocado sliced

Directions

1.) In a large skillet heat olive oil. Once hot saute pepper, zucchini, celery, apple, onion, garlic & mushrooms and mix all together until tender. Remove from pan.

2.) When the veggies have cooled down, place it all into a medium bowl along with ground meet, tomato paste, spices, salt & pepper. Mix well with clean hands.
3.) Place in the refrigerator for at least one hour to set and combine.
4.) Form into 8 patties and heat up your grill.

5.) Cook burgers on medium heat for about 4-5 minutes per side until they appear cooked through.
6.) Serve on rolls of your choice with avocado slices.

  1. Loving this! I put grated apple and onion in my chicken burgers too! I’m definitely intrigued by the coriander though… will have to try it!
