Growing up in my house there was at least one night a week where Rotisserie Chicken was served, AND, I’m not going to sugar coat it and tell you that I was too fond of this choice. It seemed a little dull of a dinner to me, (sorry mom) even though, a little ketchup did kick it up a notch. However, at the time, I definitely did not see the potential in this very versatile creation. Once I started dissecting and experimenting, I was fascinated by the multitude of dishes this bird could offer. Let’s start on the various Rotisserie flavors! I have seen Oven Roasted, Barbeque, Honey, & even Lemon Herb. It can be found hormone free, Organic, plus located more or less at any supermarket, Costco or Sam’s Club along with food specialty stores. Now, with all those options, obviously, there are tons of fans just like me who love a little short cut in their poultry preparation once in a while. I have a little bit of a routine with this chicken. Typically I’ll serve it to the kids for dinner (it’s plain so it works) the night I buy it. Then I’ll either create some type of fajita or salad dish with whatever I have around the house. There is no formula for this one; it’s a real anything goes. (I included lots of choices as you will see) Additionally, this chicken salad will be a perfect addition to your Mother’s Day spread. You’ll be getting little works and tons of compliments.
Ingredients
- 3 cups shredded Rotisseie chicken; skin and bones fully removed
- 1/3 cups finely chopped shallots or red onion
- 1/4 cup reduced-fat mayonnaise
- 1/3 cup pistachios or smoked almonds
- 1/4 cup dried cherries or dried cranberries
- 1/3 cup peeled apples diced or 1/3 cup sliced red seedless grapes halved
- 1/3 cup diced carrots or celery
- 1 teaspoon Dijon mustard
- 1/4 teaspoon salt
- Ground pepper to taste (don’t be shy with it)
Directions
1.) In a small bowl whisk together mayonnaise, mustard salt and pepper.
2.) In a large bowl toss in remaining ingredients.
3.) Pour the dressing over the salad and thoroughly combine.
4.) Add a sprinkle more of ground pepper and Enjoy!
