“As you probably know I am all about carving calories out of our favorite dishes, but sorry, not this time!  My family’s Old Fashioned Corn Pudding is just too good tweak and is worth every last calorie.
If you are prepared to make comfort food at it’s finest then you must try this one out.  A superb holiday side dish that I bet will get you the Oohs & Aahs of the night!
Ingredients
  • 1-14.5 can creamed corn
  • 1/4 cup + 1 tablespoon butter or margarine
  • 1 1/2 sleeves salted saltines (Place crackers in a large Ziplock bag and crush with rolling pin; wine bottle will work too.)
  • 1/2 cup whole milk
  • 1 medium yellow onion chopped
  • 1 large beaten egg
  • 1/2 teaspoon Kosher salt
  • 2 tablespoon olive oil
  • Ground pepper to taste
Directions
1.)  Preheat oven to 350 degrees.
2.)  Melt 1/4 cup of butter in a large skillet and then add onions over low heat.  Saute until they start to brown. (The butter gives tremendous flavor and the oil keeps them from burning!)
3.)  Remove from heat and let cool.
4.)  In a medium-sized bowl mix milk, corn, egg, salt & ground pepper.
5.)  Add in onions and combine.
6.)  Lay crackers into a sprayed 9X12 baking pan. (Make sure you have a thin layer so it gets nice and crusty.)
7.)  Spread corn mixture into dish and dot with remaining butter.
8.)  Bake for 1 hour uncovered until golden and crusty.
