Tasty Tip Of the Week - Another great way to use up those leftover English muffins is Multi-Grain English Muffin French Toast; a healthy and hearty way to jazz up your boring ever-day breakfast.

For one serving, whisk together 2 egg whites (or 1 whole egg) with 2 tablespoons almond, soy, or skim milk, 1/4 teaspoon vanilla extract, & 1/2 teaspoon cinnamon.
Pour into a shallow dish. Fork-split the English muffin and soak it cut-side down in the egg mixture for at least half an hour turning muffin over half-way through (Over-night is best + and saves you time in those crazy AM hours.)
Cook “French Toast: in a small sprayed skillet over medium heat for about 2-3 minutes per side.
Top with a little light syrup and your favorite fruit. I do blueberries, a sprinkle more of cinnamon and a spoonful of cottage cheese or Greek yogurt, for EXTRA protein and calcium…Enjoy!!
