Tasty Tip Of the Week - Another great way to use up those leftover English muffins is Multi-Grain English Muffin French Toast; a healthy and hearty way to jazz up your boring ever-day breakfast.
(Thomas’ Light Multi-Grain English Muffins have 8 grams of fiber each and only 100 calories!) By the way, studies show that after fasting all night, eating breakfast jump starts your metabolism for the day….enough said!
For one serving, whisk together 2 egg whites (or 1 whole egg) with 2 tablespoons almond, soy, or skim milk, 1/4 teaspoon vanilla extract, & 1/2 teaspoon cinnamon.
Pour into a shallow dish. Fork-split the English muffin and soak it cut-side down in the egg mixture for at least half an hour turning muffin over half-way through (Over-night is best + and saves you time in those crazy AM hours.)
Cook “French Toast: in a small sprayed skillet over medium heat for about 2-3 minutes per side.
Top with a little light syrup and your favorite fruit. I do blueberries, a sprinkle more of cinnamon and a spoonful of cottage cheese or Greek yogurt, for EXTRA protein and calcium…Enjoy!!
