“If you enjoy healthy baking then you are without a doubt familiar with Rule #101, which is replacing oil with APPLESAUCE when making cake, cookies, etc…However, APPLESAUCE can also add great flavor to our everyday dinners!!  Try these low-fat chicken burgers for a change; they are super healthy and add a whole new dimension to burger nights!”

Ingredients

  • 1 lb. all white meat ground chicken (I usually go to the butcher for this….If you are tied for time and can only manage to go to the supermarket, turkey meat is a fine alternative, but try for all white meat.)
  • 1 1/2 cup fresh whole wheat bread crumbs. (Grind up 2 multi-grain light English Muffins in your Magic Bullet or Food Processor; its worth it and  there is very little effort involved.)
  • 1/2 cup low-fat milk or almond milk
  • 2 tablespoons finely grated sweet white or yellow onion. (Get rid of that over-sized grater; a Microplane Zester/Grater is a very easy tool to use not only for onions, but also zesting lemons, limes, etc….Target along with Bed, Bath & Beyond carry them.)
  • 1/4 teaspoon Kosher salt
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder (There are chicken grill spice mixes in supermarkets that can be used in place of what I listed for this recipe.  I prefer “Pereg Mixed Spices for Grilled Chicken,” which is a Kosher brand found at ShopRite and www.AviGlatt.Com.)
  • 1/4 cup all natural applesauce (1/2 of a individual cup will do the trick rather than buying the whole jar.)
  • 1 avocado sliced (Avocado is a wonderful “topper” for chicken burgers.)
  • 2 tablespoon olive oil
  • ground pepper

Directions

1.)  Place ground chicken meat in a medium-size mixing bowl. 
2.)  Pour in milk, 1/3 fresh bread crumbs, onion, apple sauce, salt, spices, ground pepper and mix with your hands forming into 4 patties. (Remember not to over-work the mixture.)
3.)  Spread the remaining bread crumbs in a shallow plate and coat each burger front and back with the crumbs. (This creates delicious crust on the burger.)
4.)  In a large skillet, heat your oil and cook chicken until you see a golden brown crust form and then flip to other side. (Usually about 4-5 minutes per side.)  If your burgers seems to be burning on the outside BUT are not yet fully cooked on the inside, 
      finish heating them through in the oven at 350 Degrees for another couple of minutes.
5.)  Serve with sliced avocado on a toasted English Muffin with whatever else you like. Eat & Enjoy!
